Blue Apron Caribbean Chicken Curry is a unique, delicious twist on traditional Thai curry made with garam masala and coconut milk. This week, I decided to follow the recipe exactly as written.
Normally, I’ll either leave out certain ingredients or substitute something else for another ingredient. This time around, I wanted to see what the result would taste like if I followed it to a T.
I love Caribbean food because anything with coconut milk is good in my book. I was a little hesitant about the garam masala because it’s not something I have cooked with before. I’ve been eyeballing those little jars for years and finally decided to give it a try.
How To Prepare Blue Apron Caribbean Chicken Curry?
Blue Apron Caribbean Chicken Curry is very easy to prepare. You can prepare it at home also.
You need the following ingredients:
- 2 Tbsp oil,
- 1 large onion chopped,
- 4 garlic cloves minced,
- 2 tsp garam masala or curry powder (I used Garam Masala),
- 1 tsp chili powder,
- 3/4 tsp salt
- 1/2 tsp black pepper
- 14 oz diced tomatoes
- 6 cups cauliflower florets.
- 3/4 cup coconut milk
- 2 1/2 cups cooked chickpeas, drained and rinsed (I used canned)
1. Rinse the rice with cold water to remove excess starch. Soak it for 20 minutes and drain well (The reason for rinsing and soaking is because it shortens the cooking time).
2. In a large saucepan, heat oil over medium-high heat.
3. Add onion and garlic, saute until it is soft and translucent for about 8 minutes.
4. Add garam masala, chili powder, salt, and pepper to the onion mixture and cook for 1 minute or until fragrant.
5. Add tomatoes and coconut milk to the onion mixture. Reduce heat, cover, and simmer for 10 minutes.
6. Add chickpeas, cauliflower florets, and uncooked rice to the saucepan. Cover with lid and reduce by half or until almost all liquid is absorbed (about 25-30 minutes).
7. Fluff with fork before serving. It goes well with mango chutney if you like it.
