  • 14 oz diced tomatoes
  • 6 cups cauliflower florets.
  • 3/4 cup coconut milk
  • 2 1/2 cups cooked chickpeas, drained and rinsed (I used canned)

Direction:

1. Rinse the rice with cold water to remove excess starch. Soak it for 20 minutes and drain well (The reason for rinsing and soaking is because it shortens the cooking time).

2. In a large saucepan, heat oil over medium-high heat.

3. Add onion and garlic, saute until it is soft and translucent for about 8 minutes.

4.  Add garam masala, chili powder, salt, and pepper to the onion mixture and cook for 1 minute or until fragrant.

5. Add tomatoes and coconut milk to the onion mixture. Reduce heat, cover, and simmer for 10 minutes.

6. Add chickpeas, cauliflower florets, and uncooked rice to the saucepan. Cover with lid and reduce by half or until almost all liquid is absorbed (about 25-30 minutes).

7.  Fluff with fork before serving. It goes well with mango chutney if you like it.
