  • 2 Tbsp of Ghee (clarified butter)  
  • 1 lb Chicken breast, cut into 1/2 in pieces
  • 3 tbsp Garam Masala
  • 5-6 green cardamom pods
  • 1 tsp Ground Cumin (Jeera)
  • 2 bay leaves
  • 1 tsp Turmeric Powder (Haldi)
  • 1/2″ cinnamon stick
  • 2 De-seeded and chopped Tomatoes  

Making Method

Step 1: Clean and wash the chicken pieces, rinse them underwater. Pat dry with paper towels.

Step 2:  In a bowl, combine the Chicken pieces with Cumin, Turmeric, and Garam Masala (1 tbsp each)

Step 3: Heat half of the ghee and add bay leaves and cinnamon stick. Cook for 10 seconds or until you see the first scent of Bay leaves.

Step 4: Add the Spice Mixture to the chicken and mix well. Divide the mixture into 4-5 portions.

Step 5: Place each portion into a separate Ziploc bag and flatten it by pounding with the back of a spoon.

Step 6: In a nonstick pan, heat the remaining ghee and fry the flattened chicken until golden brown from on all sides. While frying, add a little water or chicken stock to prevent burning.

Step 7: When done, remove to a plate and keep aside.

Step 8: In the same pan, add chopped Tomatoes, Turmeric, and Garam Masala. Mix well.

Step 9: Cover and cook on medium heat for about 10-12 minutes or until the masala starts smelling good.

Step 10: Add the fried chicken pieces and mix well till the masala coats the chicken pieces.

Step 11: Sprinkle some water to prevent the mixture from getting too dry. The water will get absorbed by everything else in a short period. Also, add salt to taste.

Step 12: Cover and cook on medium heat for another 5-8 minutes or until the chicken is completely cooked.

Step 13: Turn off the heat and let it sit for 5 minutes before serving hot with Roti, Paratha, Naan, or Rice.
