Chicken Boti Kabab is a dish from my homeland, Afghanistan. The dish’s name means “Baked Chicken on a Stick.”

How To Make Chicken Boti Kabab?

Ingredients

  • 2 lbs. chicken breast
  • 2 cups yogurt
  • 1/4 tsp nutmeg
  • 1/2 tsp cinnamon
  • salt and pepper to taste

Directions

Step 1: Take 2 lbs. of chicken breast and cut it into bite-size pieces. Then marinate it in yogurt overnight. Next, take your pouch of marinated chicken (I usually do this a day or two ahead) and boil it until cooked through.

Step 2: Now that your chicken is boiled and cooked through, you can go ahead and put it back in the yogurt marinade to keep it nice and moist.

Step 3: Prepare your skewers using a length of wood or a wooden skewer that is at least the diameter of the meat (which will be about 1/2 inch). Lay down one piece of chicken on each skewer. The chicken should have a row of bites on each skewer to avoid falling off.

Step 4: Take a large pot and fill it with olive oil. Heat the oil to a temperature of 350-400 degrees. Then, lower the temperature to 300-350 degrees to cook the chicken.

Be sure only to fry chicken on one side to stay moist when they are cooked. Deep frying is fairly time-consuming, and I don’t think even my mother has time for that every night.

Step 5: Once your chicken is brown and crispy, take it out of the oil and allow it to cool on a plate lined with paper towels.

Step 6: Now, you can put the chicken on a grill to cook it further so that it’s nice and warm when you serve it. This is an optional step. Serve the chicken with yogurt or ketchup if desired. Enjoy!
