  • 1 cup chopped red onion
  • 1 can cream of corn, undiluted
  • 1 can (10 ounces) diced tomatoes with green chilies

Directions

1. Cut chicken into bite-size pieces. Season with salt and pepper to taste.

2. Heat oil in a large skillet over medium-high heat and cook chicken until cooked through and lightly browned, about 6 minutes.

3. Remove from the skillet and set aside. Add bell peppers and onions to the skillet; cook until tender, about 5 minutes.

4. Add cream of corn and tomatoes; cook for about 5 minutes, frequently stirring.

5. Add chicken and water to the skillet; bring to a boil. Reduce heat and let simmer for about 15 minutes or until liquid is mostly absorbed (the rice absorbs the most amount of liquid).

6. Add the bay leaf to the crock pot; add the chicken mixture. Pour cream of corn mixture on top of everything in the crock pot.
