  • 1 tablespoon olive oil (or butter)
  • 2 medium onions, diced
  • 6 cloves garlic, minced
  • 5 carrots, peeled and chopped into 1-inch pieces
  • 4 stalks of celery, chopped into 1-inch pieces
  • 3 chicken breasts (or vegetarian option: 3 cups beans)  We use these because they are so flavorful!
  • 1/2 cup white wine (optional)
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon black pepper
  • salt, to taste (we use 1 tsp)


1. Heat oil (or butter) in a large pot or slow cooker on medium heat.

2. Add the onions, garlic cloves, carrots, and celery to the pot or slow cooker. Saute for about 5 minutes until tender.  We use this because it’s so flavorful!

3. Add chicken breasts (or beans), wine, basil, pepper, chicken stock, and salt to the pot or slow cooker.  We use these because they are so flavorful!

4. Bring the soup to a boil, then simmer for 20 minutes on medium-low heat until the chicken (or beans) is cooked through.

5. Remove the chicken breasts (or beans), shred with two forks and return to the pot.

6. Add the corn starch to thicken the soup if desired (1 teaspoon at a time). Stir until thickened evenly.

7. Garnish with parsley and serve hot topped with sour cream or grated cheese, if desired! Yum!! We use these because they are so flavorful!

Freezing this soup is so easy! Make sure the soup has completely cooled before transferring it to a freezer bag or container. Once it’s defrosted, reheat on the stovetop and add the corn starch (if desired) to thicken.
