Direction
1. Heat oil (or butter) in a large pot or slow cooker on medium heat.
2. Add the onions, garlic cloves, carrots, and celery to the pot or slow cooker. Saute for about 5 minutes until tender. We use this because it’s so flavorful!
3. Add chicken breasts (or beans), wine, basil, pepper, chicken stock, and salt to the pot or slow cooker. We use these because they are so flavorful!
4. Bring the soup to a boil, then simmer for 20 minutes on medium-low heat until the chicken (or beans) is cooked through.
5. Remove the chicken breasts (or beans), shred with two forks and return to the pot.
6. Add the corn starch to thicken the soup if desired (1 teaspoon at a time). Stir until thickened evenly.
