How To Make Chicken Salad Chick Soup?

Ingredients

  • 1 lb. chicken breast
  • 4 c. chicken broth {I use organic low-sodium}
  • 1 tsp. dried sage
  • 1 tsp. dried thyme
  • 2 c. chopped celery
  • 2 Tbsp. chopped onion
  • 2 Tbsp. chopped carrot (about a medium-sized carrot)
  • 6 fresh mushrooms, quartered or large dice (your choice) {I use oyster mushrooms, which are much larger than button mushrooms}
  • 4-6 Tbsp. fresh parsley (to taste)
  • 4 Tbsp. fresh chives (to taste)
  • 2 Tbsp. fresh lemon juice (about 1 lemon)
  • salt and pepper to taste
  • 3-4 slices of French or whole-grain bread, toasted

Making Procedure

Step 1. Place chicken, broth, and herbs in a large pot and bring to a boil. Cover with a lid and reduce heat. Simmer for 10 minutes.

Step 2. Transfer cooked chicken to a plate and cool to room temperature. Shred the chicken with two forks (like you would shred the meat for tacos, burritos, or pasta). Set aside.

Step 3. Heat the pot of gently boiling broth on medium heat.

Step 4. Add the vegetable chunks and bring to a boil.

Step 5. Add the shredded chicken and chopped celery, bring to a boil again, cover with a lid and cook for about 10 minutes or until the vegetables are softened. After cooking for 10 minutes, add more broth or water if the soup gets too thick.

Step 6. Add chopped mushrooms and cook for 2-3 minutes until they are heated through. Season with salt and pepper (if needed).

Step 7. Crumble the toasted bread and add it to the soup.

Step 8. Add parsley, chives, lemon juice, and mix. Cook for another minute.

A study showed that people who consumed whole grains had a lower risk for heart disease and chronic-degenerative diseases such as cancer and dementia.

3. Vitamin A

Not only will you get the eye-supporting benefits of beta-carotene, but it promotes bone health and helps with cell growth and repair.

4. Vitamin K

The benefits are plenty in one simple breakfast! Eggs contain selenium, an essential nutrient that protects your cells from damage caused by free radicals.

Potassium can prevent high blood pressure and stroke by stabilizing your heart rate and lowering the risk of abnormal heart rhythms.

Potassium also helps maintain normal muscle function, including the muscles in your stomach and intestines. A potassium deficiency could lead to headaches, fatigue, depression, or constipation.

8. Zinc

Zinc is a trace element that works to bolster the immune system and develop new cells. Implications of zinc deficiencies are linked to Alzheimer’s disease and cancer prevention. A zinc deficiency also increases your risk of type-2 diabetes.
