How To Make Chile Lime Ranch Salad With Chicken?
- 2 cups cooked chicken, chopped
- 3 cups (greens, I used a mixture of kale and spinach)
- 1 1/2 cups cooked quinoa, cooled
- 1 cup sweet corn kernels
- For the dressing:
- 1/4 cup mayonnaise
- 2 limes, brought to room temperature and juiced
- 2 teaspoons of lime zest (from 1 lime)
- 1/2 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon onion powder
- 1/2 cup whole buttermilk (or half and half, as I used)
Step 1: To begin, make your ranch dressing. Combine all the ingredients in a glass jar or bowl and whisk or shake until everything is mixed up. Set aside.
Step 2: Next, start mixing the greens and other salad ingredients. I used kale and spinach, but you could also use romaine lettuce, field greens, or any different combination of greens that you love!
Be sure to give it a good toss so that they are all evenly coated with dressing.
Step 3: Add the cooked chicken, quinoa, sweet corn, and buttermilk ranch dressing to the salad bowl and thoroughly mix everything until everything is coated in sauce.
Step 4: Serve immediately or chill for about 30 minutes before serving. If you are cooling it for later, stir in some buttermilk or half and a half to thin out the ranch dressing as it tends to thicken up a bit when chilled.
