So, when I found the recipe in the Japanese Cooking 101 book, I tried to make it at my home! It was delicious and my favorite fried chicken now.

How to Make Taki Fried Chicken?

It is so simple to prepare for this dish. You need very simple ingredients. Let’s get ready!

Ingredients (Serves 2)

  • 1 whole chicken (2lb-3lb)
  • 1 cup water
  • 3 tbsp soy sauce
  • 6 tbsp mirin
  • 6 tbsp sugar
  • 10 cups oil for frying Marinade
  • 6 tsp salt
  • 6 tsp ground black pepper
  • 6 tsp garlic powder
  • 6 tsp ginger powder
  • 4 1/2 tsp katakuriko (potato starch)
  • 1 1/2 tsp shichimi togarashi (Japanese seven spice)

Directions:

1. Cut whole chicken into bite-size. 

2. Put marinade ingredients in a bag and shake well, then put chicken pieces in a bag and shake until all are coated with the marinade.

3. Let sit for at least 30 minutes.

4. Heat oil in a pan over high heat.

5. Drain off the marinade from chicken pieces. And cook at 350F until the outside is crispy, about 5 minutes on each side depending on the size. Or you can deep fry them by adding more oil if you like extra crispy!

6. Drain well on paper towels.

Fried chicken is great when served with scallion salad or Japanese-style pickled ginger carrots. You can also serve with rice and miso soup! Enjoy your Japanese Taki Fried Chicken!
