  • 3 Potbelly multi-grain sandwich rolls

  • 1 large tomato, sliced thin
  • 1/4 cup fat-free feta cheese crumbles (you can also use low fat)
  • 1/4 cup red onion, finely chopped
  • small handful parsley, chopped fine (optional)
  • salt and pepper to taste

Instructions

Step 1. Place the Potbelly bread in a toaster and cook until slightly toasted.
