  • 4 cups of peeled shrimp
  • 1 tablespoon oil
  • 2 packages Zucchini pasta (zoodles)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • ½ a brown bell pepper diced into cubes  (or you can use any other color bell pepper that you like)
  • 1 can of diced tomatoes (14.5 oz.)
  • 3 cups of chicken broth
  • ½ a cup of water
  • 2 tablespoons Dijon mustard

Direction

1. Cook pasta according to package directions; drain and keep aside.

2. Cut chicken into cubes, dice onion, mince garlic cloves, de-vein shrimp (if using), and cube bell pepper.

3. Heat skillet over medium-high heat with oil; add chicken breast and cook until no longer pink for about 5 minutes.

4. Add garlic, onion, bell pepper, and shrimp to the pan and cook until shrimp are no longer pink.

5. Stir in diced tomatoes, chicken broth, water, and dijon mustard. Bring to a boil; cover and simmer for 10 minutes.
