  • 1 lb boneless skinless chicken breasts, cut into bite-size pieces
  • 1 c chopped celery, leaves, and stems
  • 1 c chopped green onions (green and white parts)
  • 1 c shredded carrots
  • ½ c chopped roasted salted peanuts, unsalted
  • Sauce Ingredients:
  • 1 avocado
  • 3 Tbsp nonfat plain yogurt or Greek yogurt
  • 2 Tbsp rice vinegar (or 1 Tbsp apple cider vinegar, 1 Tbsp lime juice) 
  • 1 tsp honey or agave nectar (optional)   – olive oil and water as needed to thin out the dressing


Step 1. In a food processor, blend the sauce ingredients until smooth. Taste and adjust seasoning if necessary.

Step 2. Coat a large skillet with nonstick cooking spray and heat over medium-high heat. Add chicken and saute until lightly browned about 5 minutes.

Step 3. Mix the celery, green onions, carrots, and chopped roasted salted peanuts by hand or with a wooden spoon in a medium bowl.  

Step 4. In another bowl, mix the chopped chicken with prepared sauce.

Step 5. Spoon the chicken mixture onto each lettuce leaf and top with avocado slices (or your choice of favorite vegetables).
